Liver and Bacon

My good friend the Welsh Dog is on a diet. Not unusually he is practically unable to think about anything other than food. I do hope he will forgive me for posting the photo below. We both have a great love of "wet" food, - stews, soups and casseroles.

Liver and bacon casserole, with Kabocha squash mash and stir fried kale and mushrooms.

Luckily I have a wireless keyboard linked to the laptop on which I'm writing else I'd have soaked it... I'm still drooling :D

We... that is the rest of the family... will be having a beef and tofu stir fry with black bean sauce for dinner... I'll be on the powdered soup again. Grrr... still a few weeks more and I can start having evening meals again!

I'm still wondering how I'll cope over Xmas when I'll be spending days cooking... yet not be able to taste or sup on any of it!

Dear Dog! This sounds like torture. I thought a high carb diet would have you stuffing out on rissotti, pasta and mountains of mash. Why the powdered soup?

It's a *low* carb diet... extremely low! The high carb was a 3 day preparation for a 'glucose tolerance test' to test me out for diabetes etc... and boy did I feel bad after eating all that. :)

My body is slowly getting used to the low blood sugar... but I do miss eating real food. Still... only a few more days and I can start to eat an evening meal. I'll expand on this in the blog later on.

By the way... no way would the kids eat the stir-fry despite being made with fresh veggies and fillet steak. Little gits :D
